Almost five years ago, Alexander and Carlota arrived in Austin in search of a fresh beginning after the pandemic reshaped their lives in Mexico. Married for 32 years, they embraced this new chapter with the courage to start again.

For Alexander, food had always been more than a passion—it was part of his heritage. During his years in Mexico, he balanced a career in IT with countless hours in the kitchen, quietly refining his craft. Austin gave him the opportunity to finally follow his true calling. A self-taught chef, he developed a philosophy he calls “food with an accent”—a cuisine rooted in identity, creativity, and soul.

After gaining experience creating menus for a wine bar, Alexander and Carlota brought their vision to life with Pairing Project. They wanted to bring into people’s homes what they love most: serving others and creating moments of genuine happiness. They set out to build something of their own—an intimate, harmonious experience where food, wine, and storytelling come together. Pairing Project is the result: a celebration of flavor, connection, and the joy of sharing something truly special.
