OUR STORY
In the Texas Hill Country, Melissa and Ryan—two young wine specialists—were charting their own path. In a region where first-generation winemakers are redefining the industry, they immersed themselves in the craft, from harvests and cellar work to formal wine studies. Their dedication and respect for artisanship quickly earned them recognition within the Texas wine scene.
Meanwhile, almost four years ago, Alexander and Carlota arrived in Austin, seeking a fresh beginning after the pandemic reshaped their lives in Mexico. Married for 32 years, they embraced this new chapter with the courage to start again. For Alexander, food had always been more than a passion—it was part of his heritage. Raised in an aristocratic family that instilled in him the value of fine dining, he spent years balancing an IT career in Mexico City with countless hours in the kitchen. Austin offered him the chance to finally follow his calling. He became a self-taught chef, shaping a philosophy he calls “food with an accent”—cuisine rooted in identity, creativity, and soul.
It was at a wine bar in Austin that the four paths crossed. What began as casual tastings soon revealed something extraordinary. Over two years working together, Melissa and Alexander, —wine specialist and chef— discovered an undeniable harmony: his inventive dishes elevated her carefully chosen wines, and each sip, in turn, transformed the food. The synergy was so profound that they decided to create something entirely their own.
From that vision, Pairing Project was born—an immersive concept dedicated to tasting fine wines and uniting them with perfectly paired bites in harmonious balance.

Wine expert Melissa Dean will unveil the story behind each label, guiding you through its taste, aroma, and aging, while immersing you in culture, history, and flavor. Complementing the experience, Chef Alexander Danon curates exquisite bites crafted to elevate each pairing.
